Manage episode 516208418 series 3691842
Erik Fabian talks with Daniel Leader about his latest book: A Slow Rise: Favorite Recipes from Four Decades of Baking with Heart.
Daniel Leader is the founder of Bread Alone Bakery in New York state. A sourdough baking pioneer, he has written cookbooks for over 25 years including: Bread Alone: Bold Fresh Loaves from Your Own Hands and the James Beard Award winning Living Bread.
A Slow Rise charts the history of Bread Alone and showcases its most beloved recipes. From revolutionizing artisan bread making in the eighties to operating the country’s first carbon-neutral bakery today, Bread Alone has existed at the cutting edge of bread and pastry for over forty years. Across more than sixty recipes, Leader teaches you to bake with your senses, have patience, and form an almost meditative practice in the kitchen.
We talk about his books, how the culture of sourdough baking has changed in the last 30 years and how to learn professional baking secrets from bakers.
