- Just keep cooking it up until it tastes tangy
- Optional: add a smidge of vinegar

- Sautee Turkey necks until kinda brown
- Add chicken stock, sauteed onions, garlic, whatever
- Braise meat until tender
- Add greens (not kale)
- Add seasonings (bay leaf, thyme, sage, pepper, mustard powder, smoked paprika, garam masala, whatever)
- Boil another 20-30 minutes
- Add a little apple cider vinegar but not too much
