Joshna has been managing change-making projects in the food industry for 13 years, and now she's launched a best-selling book about her experiences: Take Back The Tray. It's all about institutional food and how it needs to change dramatically. Schools, hospitals, and other public institutions need to rethink how they procure, cook, and serve food.
